Step 1: Prepare the Veggie Dippers
- To prepare veggie dippers, boil the potato and carrot on medium heat for 8 to 10 minutes. Then, add the frozen peas, red pepper, sweetcorn, rice, boiled carrots, and potatoes to a food processor.
- Put the mashed vegetables in a mixing bowl and add tomato puree, black pepper, garlic granules, smoked paprika, salt, and onion granules; mix them well.
- With your hands, shape the mixture into a dipper and place it in the freezer for 1 to 2 hours. Now, it’s time to remove your firm veggie dippers and dip them into coconut milk and breadcrumbs for a complete coating.
- Preheat the oven to 200°C, place the tray of coated veggie dippers into it, and cook for 15 to 20 minutes to make these veggie dippers completely crispy.
Step 2: Slice the Vegetables
- Chop the vegetables into slices, including tomato, onion, and cucumber (optional).
- Add carrot and cabbage as optional, but don’t forget to include shredded lettuce leaves.
